Detox Chicken Tortilla Soup
I love cooking a) because it can either be a peaceful experience or a fun family affair, and b) because I love knowing what is in my meals. We often order restaurant soups that have so much sodium and hidden unhealthy ingredients, meaning that we are not eating healthy even when we think we are.
Mamas — This soup was so quick to make without an abundance of ingredients!
HOW TO MAKE
Sauté the celery onion and garlic with 1 tablespoon evoo & 1/3 cup broth & salt pepper to taste for 4 minutes till soft. Next, add the rest of the ingredients with just a small handful of cilantro. Save the rest of cilantro, lime, avocado, tortilla chip strips for the topping.
Cook on low in dutch oven 2 hours or 4 hours on low if using a slow cooker.
Ingredients You’ll Need
- 1-1.5 LB sliced chicken breasts
- 2 14 oz cans no salt added diced tomatoes
- 1 carton low sodium chicken broth + 1 cup water
- 1 onion diced
- 1 bunch cilantro
- 2 limes
- Corn chip tortillas stripes
- 1 tablespoon cumin + chili powder
- 2 cups shredded carrots
- 4 celery stalks diced
- 5 garlic globes minced
